In the past 4 weeks, we did 3 corporate caterings: for 175 people, 60 people, and 20 people.
I looked at these orders and asked myself...

It didn't take long to figure out. All of them wanted good food in an unfussy way.
Feed good food to my crew, I'm not worried about the frou-frou. There's a time for the fancy-schmancy presentation, and this ain't it.
We have a pretty small menu. Some have gone to Sam's or Hy-Vee to round out the sides they want. Others made an item or two. I just want to stay true to the things we do best.
